Linda’s Greek Cucumber Salad

For a quick, yummy lunch, try my easy Greek Cucumber Salad.

  • 1 whole cucumber
  • 10 grape tomatoes
  • 1/4 cup feta cheese
  • 3 tablespoons of Tzatziki dressing/dip

Wash, slice and cut cucumber slices into fours. Place in bowl. Wash grape tomatoes and place in bowl. Add feta cheese and Tzatziki dressing on top. I prefer the Sabra brand of the Tzatziki dressing but any brand will do. Mix together and enjoy!

This dish, like most of my dishes has only a few ingredients some of which are pre-packaged, store bought items. I only share what I really eat and what my lifestyle permits me to make because like most of you, my time is limited due to work, kids and other obligations. Low Carb Living is a lifestyle change not a diet therefor, I believe, everything I make, eat and post about has to be something that I and my readers can realistically do long term.
